From your Quotation screen, you will need to accept the quote to turn it into a Sales Order first.
To do this, simply click the Accept icon and enter the relevant dates and (if necessary) payment amounts for the order.
Once you have done this, the 
Cab Builder icon will be activated at the bottom of the screen.
From this icon, you can produce the relevant paperwork to send to the factory to manufacture the items on the order. You can also export to your optimizer from here too.
